Jen's White Chili

Ingredients
1 tbsp olive oil4 skinless, boneless chicken breast halves, cubed1/2 large onion, chopped1 1/14 c chicken broth1 (4 ounce) can diceed green chilis1 1/2 tsp garlic powder1 1/2 tsp ground cumin1/2 tsp dried oregano or italian seasoning1/4 tsp cayenne pepper1/4 tsp crushed red pepper2 (15 oz) cans cannellini beans or white northern beans2 green onions, chopped2 oz shredded Colby/Monterey Jack cheese
Directions
1. Heat oil in skillet or med-high heat. Cook chicken, bacon, and onion 5-7 min, or until chicken is halfway done and onion is tender
2. Stir in broth, chilies, and spices. Reduce heat and simmer for 15 minutes.
3. Stir in beans and simmer for 5 more min or until chicken is completely cooked.

Garnish w/ green onion and shredded cheese.

Makes approx 4 servings.

Adjust cayenne pepper and/or add extra green chilies to make it spicier. Still good if you want to remove the bacon or replace w/ turkey bacon to cut fat/calories content a bit more (but like everything else it's better w/ bacon!)
