CHS Tomato Cucumber Salad with Feta

10 oz. baby spinach1/2 red onion, chopped finely3 large tomatoes, cut in wedges or diced1 medium cucumber, sliced1 green pepper, thinly sliced2 tsp fresh dill, chopped1 Tbsp fresh mint, chopped2 Tbsp fresh lemon juiceSalt to taste5 Tbsp olive oil2 oz. feta cheese, crumbled
1. Combine onion, tomatoes, cucumber, pepper, dill and mint in a large bowl.
2. Mix together the lemon juice, salt, and olive oil to make dressing.
3. Toss half of the dressing with the tomato mixture and half with the spinach.
4. Combine everything in one bowl, add the feta, toss together thoroughly and serve.
Yields 8 servings.
