Quinoa Tabbouleh

1 cup Quinoa1/3 cup Extra virgin olive oil1/3 cup Lemon juice1 cup Finely chopped scallions2 cup Lightly packed chopped fresh parsley1/4 cup Chopped fresh mint3 Tomatoes, diced1 Cucumber, peeled, seeded, and chopped1 tsp Salt1 dash Pepper
Makes 10 servings (about 2/3 cup or 150mL each)
Rinse quinoa very well, and cook according to package. Drain well. Toss with oil, lemon juice, scallions, parsley, mint, tomatoes and cucumber. Cover and refrigerate for at least 1 hour (better if left overnight). Add salt, and pepper to taste.
