Zucchini Carrot Apple Muffins

Ingredients
Zucchini, 1 cup, sliced Carrots, raw, 2 cup, grated Apples, fresh, 1 cup, quartered or chopped Applesauce, unsweetened, 1 cup *Flour, white, 1 cup *Whole Wheat Flour, 1 cup Granulated Sugar, 1 cup Cinnamon, ground, 1 tbsp Nutmeg, ground, 1 tsp Egg, fresh, 3 large Vanilla Extract, 1 tsp
Directions
Heat the oven to 375.

Mix the eggs, vanilla and applesauce in one bowl.

Grate the zucchini, carrots and apple. Mix them with the dry ingredients. Add the egg mixture.

Bake in muffin cups for 25 min. Optional: sprinkle top of batter in muffin cups with sugar crystals before baking.
