Cheese filling2 cups ricotta cheese2 cups cottage cheese 2 cups mozzarella cheese (save .5 cup)1 cup parmeasan cheese (save .25 cup)2 whole eggs3 tbs minced garlic3 tbs minced fresh parsley1 tbs minced fresh basil1 Box lasagne noodles1 whole onion minced4 whol carrots julianne sliced4 whole zuccini julianne sliced10 sliced mushroomed2 tbs olive oil3 lbs ground turkey meat4 cups prego tomato sauce
Mix cheese all ingeredients for the cheese filling saving some of the cheese for later. Set aside. Sautee chopped onion and julianne carrots till tender. Add mushrooms and zuccini and continue on low heat till all vegetables are soft. Set aside. Boil Lasagne noodles till just tender, drain and set aside. Brown ground turkey, drain and set aside. Spray bottom of pyrex pan with non-stick coating. Layer bottom with noodles. Pour entire cheese filling mixture over the noodles. Mix one cup sauce with small amount of turkey meat and pour over cheese layer. Sprinkle with cheese and top with next layer of noodles. Mix vegetables with turkey meat and sauce, save aproximately one cup sauce and meat for top layer and pour over noodles. Sprinkle with cheese. Top with last layer of noodles. Cover with remaining meat sauce and bake covered for 90 min. in a 350 degree oven. Sprinkle with remaining cheese and continue baking for 30 minutes. Makes 20 servings.
