Mushroom Beef Barley Soup

Ingredients
1.25 lb beef chuck (stew meat)1 T Extra Virgin olive oil2 c. onion, chopped1 c. carrots, sliced1/2 c. celery, sliced1 c. mushrooms, canned2 cloves garlic, minced1/2 t. dried thyme14 1/2 oz. beef broth, Swanson fat free, 33% reduced sodium14 1/2 oz. chicken broth, Swanson fat free, 33% reduced sodium2 c. water1/2 c. pearl barley
Directions
Makes about 12 1-cup servings.

In a dutch oven, brown meat in oil.
Set meat aside.
Saute onion, carrot, and celery (about 5 minutes)
Add mushrooms, garlic and thyme. Cook about 3 minutes.
Add broths, water, and barley.
Return meat and bring to a boil.
Simmer, covered for 1 1/2 to 2 hours until meat and barley are tender.
