Lentil Spaghetti Sauce

1 medium onion, diced1 medium bell pepper, diced6 oz fresh mushrooms, sliced6 garlic cloves, minced30 oz canned tomato sauce, low sodium28 oz canned whole peeled tomatoes, chopped2 Cups water1 tsp dried basil1/2 tsp thyme1/2 tsp oreganoground black pepper to tastea few splashes of hot sauce (to taste)1 TBS olive oil1 cup of lentils
In a large pot, saute onions & peppers in the olive oil, add mushrooms & garlic. Add remaining ingredients bring to a boil. Reduce to medium low & cover. Stir occasionally. Simmer for 45 minutes.
Serve over cooked pasta,
approximately 14 servings.
