1 large onion, finely chopped1 cup chopped fresh mushrooms1/4 cup finely chopped green pepper2 tablespoons extra virgin olive oil3 cups grated carrots1 1/2 cups finely chopped celery5 eggs, beaten1/2 cup chopped walnuts1/4 cup unsalted sunflower seed kernelsdash sea salt1 tsp Italian seasoningdash pepper 6 slices Sara Lee 45 calorie whole grain bread, crumbed
In nonstick skillet saute onions, mushrooms and green peppers in olive oil until tender. In a bowl combine mushroom mixture, carrots, celery, eggs, walnuts, sunflower seeds, pepper, salt, and seasoning in a bowl. Add bread crumbs.
Coat a 9x5x3 inch loaf pan with nonstick cooking spray and then line with wax paper. Place vegetable mixture in pan. Back at 350 degrees for one hour or until meat thermometer registers 160 degrees. Let stand 10 minutes before slicing. Yields 8 servings
