Asian/Carribean slaw for lunch

Ingredients
*Zuchini Squash 1 cup(124 g) includes skin, 1.75 cup (remove)*Bell Pepper - Red - 1 large (164 gram), 164 gram(s) (remove)*Cabbage (1 cup, shredded), 3 serving (remove)Onions, raw, 2 tbsp chopped (remove)Cider Vinegar, 3 tbsp (remove)Granulated Sugar, 3 tsp (remove)Sherry, dry, .75 fl. oz (remove)Cashew Nuts, dry roasted (salt added), .4 cup, halves and whole (remove)
Directions
Mix all together and let sit for a couple of hours in fridge to meld flavor. Salt just before serving.
