6 cups chicken broth, made from boiling leftover chicken carcass4 chicken thighs with bones & skin removed, diced1.5 cups diced potatoes1.5 cups sliced carrots1.5 cups sliced celerySome thyme and basil and salt to taste
Prep time is cut down if you've already made your broth, or if you use canned broth.
Cut up chicken thighs, potatoes, celery, carrots.
Bring broth to a boil, add everything, lower heat to medium-low and cook until deliciously tender,
approximately 25 minutes, more if you like it more tender.
Add some thyme, basil and salt if you like it.
Makes 6 1.5 cup servings.
