Ingredients:*Pearl Tapioca, 1/2 cup.2.5 cups waterMilk, 3.25%, 2.5 cup Heavy Whipping Cream, 1/2 cup, Granulated Sugar, .1/3 cup Lemon Peel, 3 tbsp Salt, 1 dash
Place tapioca in medium mixing bowl with water. cover and let stand over night. Drain water from tapioca. Place in a slow cooker along with milk, heavy cream and salt. cook on high for 2 hours stirring occasionally.
In a small bowl whish the egg yolk and sugar. Temper small amouts of the tapioca into the egg mixture unti you have added at least one cup. The add this bak into the remaing tapioca in the slow cooker. Add the lemon zest and stir to combine. Cook for an additional 15 minutes, stirring once. Transfer pudding to a bowl and cover the surface with plastic wrap. Allow to cool at room temp for 1 hour and then place in the refrigerator until thoroughly chilled.
