Brown Rice and Peppers with Egg Substitute

6 tablespoons chopped shallots or green onions1/2 cup chopped small sweet peppers1 1/2 medium tomato, squeezed to remove juice1/4 cup sliced jalapenos5 cups cooked brown rice1 tsp. Mrs. Dash Garlic and Herb seasoning1 container (7 servings) egg substituteorganic olive oil spray
Makes 6 one cup servings
Spray nonstick pan with organic olive oil.
Saute shallots and sweet peppers until aromatic.
Chop tomatoes and add to pan.
Add jalapenos to pan.
Saute 3 minutes, stirring occasionally.
Add cooked brown rice. stir for constantly for 5 minutes or rice will stick to pan. Season with Mrs. Dash.
Move rice out of center of pan, forming a ring of rice against pan edges.
Pour egg substitute into center of pan and let "set" for 1 minute.
Begin incorporating fake eggs into rice mixture, stirring constantly until fake eggs appear scrambled and mixture has desired dryness. About 5 minutes.
