TOH Pork Lo Mein

Ingredients
1 pound pork tenderloin1/4 C soy sauce3 tsp minced garlic1 tsp minced ginger1/4 tsp crushed red pepper flakes2 C sugar snap peas or snow peas1 C petite baby carrots or carrot strips1 C mushrooms if desired1 red pepper, julienned6 oz thin spaghetti or lo mein noodles, cooked and drained1/3 C chicken broth2 tsp sesame oil
Directions
Cut tenderloin in half lengthwize, then cut into very thin strips. Combine soy sauce, garlic, ginger and red pepper in a resealable plastic bag, add pork, marinate 20 minutes, turning occasionally. Slice vegies. Heat wok until hot and spray with non-stick cooking spray. Stir fry pork 4-5 minutes or until done. Add carrots, fry for 1-2 minutes; add pepper and peas fry for 1-2 minutes, add mushrooms, fry 1 minutes; add cooked noodles and broth, cook 1 minute. Turn off heat, add sesame oil and stir for flavoring.
