Green Beans Sauteed with Garlic and Pinenuts

1 cup green beans, washed and snipped1 tablespoon extra virgin olive oil2-3 garlic cloves1 tablespoon or so pine nuts, roasted till golden about 5 minutes or so
1. Roast pine nuts until golden - this can be accomplished either in a dry pan over medium heat on the stove top, keeping a close eye on it and shaking the pan to prevent nuts from burning, about 5 minutes OR place pine nuts on a baking sheet in a pre-heated 400 degree oven for about 5 - 10 minutes. Set aside to cool.
2. Par-boil green beans in boiling water for 2 minutes then plunge into ice water; drain on a paper towel and set aside.
3. Heat olive oil in a skillet on medium heat with the garlic, saute for a couple of minutes until garlic is slightly golden. add green beans and toss to coat; heat through for a couple of minutes. Add pine nuts, toss to coat. Serve.
