Easy Walnut Raisin Biscotti

1/2 c. butter, softened1-1/3 c. white sugar4 eggs2 t. vanilla extract4 c. all-purpose flour1 T. & 1t. baking powder2 t. ground cinnamon2 c. chopped walnuts2 c. raisins
1. Preheat oven to 350 degrees. Lightly grease a baking sheet.
2. In a medium sized bowl, beat together butter, sugar, eggs, & vanilla. Stir in flour, baking powder & cinnamon. Mix well then stir in the walnuts & raisins. Knead until dough comes together.
3. Divid dough in half & shape into long loaves, 1 1/2" thick. Place loaves onto prepared baking sheet & flatten slightly.
4. Bake 350 degrees for 20 minutes. Allow loaves to cool enough to handle(about 10 mins). With a sharp knife cut loaves diagonally into 3/4 inch thick slices. Place cut sides down on baking sheets. Bake slices for an additional 10 minutes or until lightly browned.
* You can dip these 1/2 way into chocolate but recipe is not figured w/ it.
