Primal/Paleo spinach omelet

2 eggs1.5 cups raw spinachcoconut oil, about 1 tbsp1/3 c salsa1 tbsp fresh cilantro
Melt coconut oil on medium in frying pan. Add spinach, cook until mostly wilted. Beat eggs and add to pan. (Other optional ingredients- peppers, mushrooms, cheese, etc.) Flip once the egg sets around the edge. When it's almost done add the salsa on top just to warm it. Move to plate and add cilantro. Serves one.
