Easy Spanish Paella

25g butter1 tbs olive oil1 onion, diced1 red pepper, deseeded and diced2 pinches tumeric1 clove garlic, crushed400g spanish paella rice900ml hot chicken stock150g smoked ham, cubed150g prawns, peeled and cooked150g frozen peas
Serves 4-6
Heat butter and oil in a large, heavy, flat-base pan,
Stir in onion and pepper and fry for 3-4 minutes until soft.
Sprinkle over tumeric and fry for 30 seconds.
Add garlic and fry for 1 minute.
Stir in rice and fry for 2 minutes.
Add stock and allow to bubble rapidly, stirring continuously.
Reduce to simmer and add ham, chicken, prawns and peas.
Simmer for 20-30 minutes, stirring occasionally, until stock is absorbed and rice is tender and slightly sticky.
