Ed's Wild Mushroom Soup

2 cups Dried Porcini Mushrooms1 cup warm water2 tbsp olive oil1 tbsp butter2 leeks, finely sliced2 shallots, chopped8 oz fresh wild mushroom, sliced1 1/4 quarts beef stock1/2 tsp thyme2/3 cup fat free half & half
Serves 4
Soak dried porcini mushrooms in warm water for 30 minutes. Strain mushrooms and reserve liquid. Chop porcini mushrooms.
Heat oil and butter until it foams, add leeks, shallots and garlic. Cook slowly for 5 minutes. Add fresh mushrooms for a few minutes until softened. Add beef stock and soaking liquid bring to a boil. Simmer 30 minutes.
Puree 3/4 of the soup, return to the pot, add fat free half & half and blend and heat through
