Omelet with fresh spinach, mushrooms & goat cheese

Ingredients
1/2 cup Egg Substitute (Egg Beaters)1 cup Fresh Spinach 1 cup slices fresh Mushrooms1 oz Goat cheese
Directions
Spray frying pan with non stick cooking spray (Pam). Heat at medium high and add mushrooms, saute until brown or desired doneness. Add fresh spinach and saute just until wilted. Add egg beaters. Continue to push sides of omelet to middle and allow liquid egg mixture to flow to edges to cook. Add goat cheese. Flip omelet in half and let cook for a few seconds.
