1/2 pound grilled chicken, shredded1 c. black beans, rinsed and drained1 c. reduced fat shredded Colby-Jack cheese1 c. diced onion1/3 c. diced green pepper1/2 c. enchilada sauce
I rub the chicken with a dizzle of olive oil (calories not included here), sprinkle with salt, pepper and Mrs. Dash Southwest Chipotle seasoning. Grill on George Foreman.
Roughly chop cooked chicken then shred in food processor.
Add remaining ingredients and mix well. What you do with it next is up to you!
