Make Ahead Muffin Melts

12 whole hard boiled eggs peeled and chopped3/4 cup grated cheese (can use reduced fat)1/2 cup kraft light miracle whip6 slices of bacon fried and crumbled2 teaspoons dijon mustard1/4 teaspoon garlic powder1.5 dashes worcestershire sauce3 whole english muffins (I use Thomas light multigrain!)combine eggs with other ingredients and fold together gently. Cover and store in fridge overnightSpread on English muffin halves then broil for 3-5 minutes until hot and bubbly. (don't set them too close to heating element!) Serve immediately! great with grapefruit!

These were great!! I had company this weekend, and it was a perfect answer. I made them up the day before, and the next morning is was easy to pop them in the oven. We even reheated a couple the next day. I did use sandwich thins, and I added a little onion. I'll make again for sure!!! - 4/29/11
