Captain Jack Shrimp

4 tbsp olive oil6 cloves garlic minced1 large yellow onion chopped2 pounds jumbo shrimp cooked1 35 ounce can crushed tomatoes1 12 ounce can diced tomatoes1 12 ounce can garbanzo beans2 small cans sliced mushrooms1 medium green bell pepper 1/2 inch diced8 fresh basil leaves sliced2 tbsp parsley fresh or dried1 tsp red pepper flakes1 tsp salt
Heat 2 tablespoons oil in large pot. Saute' garlic and onion until garlic is golden and onion is translucsent. Add green pepper, mushrooms, garbanzo beans, tomatoes, basil, parsley, red pepper flakes, salt, and tomatoes. Simmer for 20 minutes. Add shrimp and simmer another 20 minutes. The Shrimp will initially get rubbery, but after a while it breaks down and gets real tender and yummy. If it seems too rubbery, just let it simmer a little longer. This recipe is really good the day after and the day after.
