Gluton Free Bread Sticks

1c corn flour2/3c potato starch1/3c tapioca starch1 1/2t xanthan gum3/4t guar gum (or more xanthan)1 T honey1 t salt1 T instant yeast1 c warm milk (105-115 degrees)1/4 c grated Parmesan1/2 c minced garlic2 T olive oil1 tsp Balsamic vinegar
(If you prefer regular active dry yeast, mix it w the milk and let it sit for 5 min.)
Do not preheat oven. Combine the dry ingredients in a mixing bowl. In a small bowl combine the wet ingredients. Add the wet to the dry and eat w the mixer about 1 min. Put the dough in a freezer bag (large enough for all) that you've cut an approx 3/4" hole from one corner. Spray or line a non-stick cookie sheet. Squeeze the dough fro the bag onto the cookie sheet, holding the bag upright. Spray tops of bread sticks with cooking spray. Place the cookie sheet on a middle rack in a cold oven and turn oven on to 400 degrees. Bake about 20min. from when oven is turned on til lightly browned. A trick to keep the bottom from getting too brown if that's a problem in your oven, is to put foil, shiny side down, directly under the pan. Conversely, if your oven tends to make tops too brown, place foil over the tops with shiny side up. This should make about 2 dozen approx. 105 CAL sticks. 1 dozen would be approx 210 CAL
