Meatless Lasagna Roll Ups

Ingredients
1 lb. Lasagna noodles, cooked al dente 30 oz. container low fat ricotta cheese6 oz. Sargento 6 Cheese Italian Blend1 large egg1 jar traditional pasta sauce1 tbps. italian seasoningSalt and Pepper to taste
Directions
Preheat the oven to 350 degrees. Bring 5 quarts of salted water to a boil. Cook the noodles until they are al dente. Meanwhile mix the ricotta cheese, 4 oz. of italian cheese, italian seasoning, beaten egg, salt and pepper. Lay the noodles out crosswise on a plate to cool slightly. Spoon three spoonfuls of filling on each noodle and roll them up. Place them in a greased 9X14 pan. Cover with pasta sauce. Sprinkle remaining cheese over the top. Cover with foil. Cook for 30 minutes. Remove foil cook for 10 more minutes.
Yields 18 roll ups. 2 Roll ups equals 1 serving (serves nine).
