Bok Choy Stir Fry

1/2 extra virgin olive oil1/2 bag Mr. Noodles Chinese Style Fresh Pack Noodles3 tbsp Chinese Five Spice3 cloves garlic1/2 acorn squash, sliced4 1/2 ginger root, minced1 cup bok choy, chopped8 medium sized mushrooms2 cups kale, chopped1/2 Anaheim pepper1 bell peppers, sliced1/4 cup red onion, diced3/4 cup vegetable broth
Heat the olive oil in a large deep skillet on high heat and add onions, garlic and squash. Once the garlic becomes fragrant, add the rest of the vegetables, excluding the kale and bok choy.
Cook the vegetables for about 5 minutes then add the vegetable broth and noodles. Add the kale and bok choy and mix everything together.
Turn the heat down low and cover the skillet. Leave for 5 minutes then serve. Best with chopsticks!
