Home made egg rolls

Ingredients
Cabbage, fresh, 1 head, large (about 7" dia) (remove)Cabbage, red, fresh, 1 head, small (4" dia) (remove)Louis Rich Turkey Smoked Sausage, 1 serving (remove)Carrots, raw, 1 cup, grated (remove)*Soy Sauce, 2 tbsp (remove)*egg roll wrappers, 24 serving (remove)*Water Chestnuts, Whole in Water, 1 cup (remove)Green onions, 1 cup (remove)
Directions
Cook 1lb of your choice of sausage - (turkey is lower in fat), drain.
Shred both kinds of cabbage, carrots need to be diced finely, water chestnuts finely chopped, green onions finely chopped - saute all with 2 tbls of lite soy sauce.

Then fill each egg roll and roll up - you can either immediately bake at 400 degrees for 12 minutes (turning 1/2 way through) or freeze for a later date.

We make 60-70 of these at a time and then take out what we need and bake then!

    I made these egg rolls for dinner last night. I used the shredded slaw cabbage and carrots for simplicity. The water chestnuts were a nice touch for crunch. I had never used them before in egg rolls. I really liked them baked instead of fried. It is great to have some for freezing for later. Thanks! - 1/13/12
