Andy's Turkey Loaf #5

Ingredients
2 tablespoons butter (can substitute w/oil)1 cup onions coarse chop4 oz (1/2 container) button mushrooms chopped fine1/2 red pepper chopped coarse3 cloves garlic minced1.2lbs ground turkey1/2 (saltine) cracker crumbs1/4 cup egg substitute1/2 cup ketchup2 tsp Worcestershire1/2 tsp black pepper
Directions
makes 8 servings

preheat oven 350

chop veggies (i used a processor for the onion and red pepper) to get them to a minced stage.
take chopped mushroom, and minced peppers, onion, add into skillet w/butter(oil) and cook until most of the moisture has gone (5 minutes or so), set off burner to cool.

in a large bowl, mix turkey, crumbs,egg substitute, black pepper, Worcestershire, 1/4 cup ketchup, and onion/mushroom/pepper mixture

make into loaf, and put in loaf pan, or make into loaf, place on baking pan with sides. put 1/4 cup ketchup on top.

bake at 350 for 50-55 minutes, remove from oven and let sit 5-10 minutes before slicing.

makes 8 servings.
