Salmon & Sweet Potato Patties with Dill

Ingredients
Directions
1 - 14.75oz can of pink salmon1 cup mashed sweet potatoes from a can1/2 cup unseasoned bread crumbs1 tsp dill2 eggs1 TBS Olive Oil
Mash & Mix first 5 ingredients together until well blended.
Heat non-stick frying pan over high flame for a few seconds. Add Olive Oil sparingly. I used a home oil sprayer. Add salmon/potato mixture as below:
Use 1/8 cup (ice cream) scoop to evenly make & drop patties into pan. (I used one from Pampered Chef) Should be able to fit about 4 "balls" into pan. Then use spatula to flatten them into patties. Cook one side for a few minutes then turn & flatten again. Repeat the flipping as necessary. Patties are done when each side is golden brown. If you like them a little crispier, cook until brown is darker.
Serve warm with Applesauce if desired. I usually serve with cooked spinach as the side.
