Canadian bacon and veggie quiche

Ingredients
2 Pillsbury pie crusts, baked five minutes1 tbsp. olive oil2 tsp. garlic, chopped1/2 c. sweet onion, chopped1/4 c. red bell pepper, chopped1 c. white mushrooms, chopped1 c. zucchini, chopped1 tsp. thyme6 slices Hormel Canadian bacon, chopped2 c. egg substitute2 c. milk (1 percent)1/2 c. grated parmesan cheese
Directions
Bake pie shells in 2 deep dish pie pans until golden. Remove from oven and let cool. Saute veggies and canadian bacon and thyme in olive oil. Remove from heat. Divide veggie mixture evenly between two pie pans. Mix egg substitute and milk together then pour equally over two pies. Sprinkle parmesan cheese over both pies. Bake 45-50 minutes. Remove from over and let cool ten minutes before serving.
