Chocolate Mousse Pie

Semisweet chocolate, 12 oz. packageTofu, silken, lite firm, 12 oz.Vanilla Extract, 1 tspEgg white, 2 servingPie crust, graham cracker, 1 pie shell (9" dia)
Melt the chocolate in the microwave on low/defrost. Break to stir it often. Mix the tofu in a blender or with a hand blender. Add the vanilla and melted chocolate to the blender.
Beat the egg white in a seperate bowl until soft peaks are formed. Fold eggs into the chocolate mixture. Place the mixture into the pie crust and refrigerate for 5 hours before serving. Enjoy.
