Pasta, Ronzoni Smart Taste, Penne Rigate, 14.5 oz - 1 boxTurkey Sausage 93% lean (from lean ground turkey), links - 1 lbOnions, raw, 1 cup, chopped Garlic, 2 clove. dicedTomato Paste, 1TbspPetite Diced Tomatoes, undrained - 2 cansBasil-Fresh, 1/4 cupMozzarella Cheese, part skim milk, 1 cupParmesan Cheese, Fresh Grated, 1 cupSalt - 1/4 tspPepper - 1/4 tspCooking Spray
Cook pasta according to package directions, drain & set aside.
Remove casings from sausage. Cook sausage, onion & garlic in a large non-stick skillet over medium heat until sausage is browned, stirring to crumble. Add tomato paste, salt, pepper & diced tomatoes to pan; bring to a boil. Cover, reduce heat & simmer 10 minutes, stirring occasionally. Combine with pasta.
Pour ½ of mixture into 4 qt cooking dish coated with cooking spray. Cover with ½ mozzarella and ½ parmesan. Repeat layers.
Bake at 350° for 25-30 minutes or until bubbly.
