Zucchini muffins with soy flour

Ingredients
Flour, white, .5 cup Soy Flour, .5 cup, Date Molasses Clic, 1 tbspEgg substitute, liquid (Egg Beaters), 2 tbsp Zucchini, .3 cup, shreddedApple Sauce - unsweetened, Our Compliments, 3 Tbsp1/3 c waterCinnamon to tastevanilla extract to taste
Directions
Grease half dozen muffin tin (6 muffins). Mix wet and dry ingredients in separate bowls, then add wet ingredients to dry all at once and stir until just blended. Fold in grated zucchini and fill 6 cups of the muffin tin. Bake in pre-heated oven 375 deg F for 15 minutes or until done.
