Triple Cranberry Chicken Lettuce Wraps (adapted)

Ingredients
1 cup ocean spray whole berry cranberry sauce1/2 cup ocean spray cranberry juice cocktail2 tbsp sugar1 tbsp minced fresh ginger root2 tsp chili garlic sauce2 garlic cloves, minced2 tbsp lime juice (or juice of 1 lime)1 tbsp grated lime peel (one lime)18 oz shredded cooked chicken breast1 cup craisins1/2 cup shredded carrot1/3 cup thinly sliced green onion1/2 cup chopped celery1/4 cup minced fresh mint12 Bibb or Boston lettuce leaves
Directions
Combine first 7 ingredients in small saucepan; bring to a boil. Reduce heat; simmer, uncovered about 5 min. Remove from heat; stir in lime juice and peel; refridgerate overnight.

Combine chicken, cranberries, carrot, green onion, celery and mint in a bowl.

Place about 3 tbsp chicken mix on each lettuce leaf; top with about 1 tbsp sauce mixture. Fold lettuce over filling and serve with remaining sauce.

Yields about 12 wraps plus extra sauce.
