Pumpkin Whole Wheat Chocolate Chip Muffins

1 cup Buttermilk (or low fat milk with 1 tbsp of vinegar)1 cup pure pumpkin puree1 egg1 cup brown sugar1/2 cup Kellogg's All bran buds cereal (there is no substitute for this)1 1/4 cup Whole wheat flour2 Tbsp wheat germ1/2 cup wheat bran3/4 cup ground flaxseed2 Tbsp cinnamon1 1/2 tsp baking powder1 tsp baking soda1/4 cup chopped dark chocolate, M&M's or mini choc. chips. (I prefer dark choc.chunks)
Preheat the oven to 400 and Line muffin pans with liners. Mix all the wet ingredients in a large bowl and mix all the dry ingredients in a medium bowl then add the wet and dry together and blend.
Scoop into muffin tins. They are extremely dense and therefore won't at all rise. These muffins are super fibre rich and can be made with other substitutes if you wish to lower the fat or turn them vegan as such.
Bake for 20-25 minutes or until done.
Makes 12 - 15 muffins
