river spinach salad

Ingredients
2 cups spinach leaves.1/2 cup mushrooms, sliced1/4 cup red onion diced1 tbl country crock light spread2 strips turkey bacon1 tbl sliced black olives1 oz feta cheese crumbles2 tbl cider vinegar1 tsp grlic1 tsp splendasalt and pepper to taste
Directions
cook turkey bacon.
wash spinach leaves, tear off large stems. place in serving bowl.
remove bacon from pan. set aside to cool.
add 1 tsp margerine, red onion, mushroom, garlic. saute.
mix cider vinegar, salt, pepper, and splenda.
chop bacon. add to spinach.
when veggies are sauteed, add vinegar mixture.
stir and pour over spinach.
spirnkle with olives and feta cheese.
enjoy
