Awesome chicken fajitas

Ingredients
2 chicken breasts thinly sliced for fajitas2 bell peppers thinly sliced1 large onion thinly sliced1 quick spray of Pam or other cooking spray. VERY light1 teaspoon black pepper (to taste)1 Tablespoon chili powder (to taste)1/2 teaspoon garlic powder (to taste)1 teaspoon red wine vinegar (to taste)
Directions
Makes 4 large chicken fajitas
Set to medium-high heat (an electric skillet works great too!)

Lightly spray non stick skillet with cooking oil. I used a 1 second spray.

Place green peppers in first because they take the longest. Sprinkle with chili and garlic powder and toss lightly.

While the peppers are cooking I slice up my 2 chicken breasts. Throw the onion in the pan after the peppers have been in for about 4 minutes.

After one minute, add the chicken. MAke sure you are stirring every minute or so. This is a stir fry type method. This will take 3-4 minutes to cook depending on how thick the slices are. Make sure it's cooked all the way through, but don't overcook.

At the last minute, add the red wine vinegar. Stir and serve.

Serving size: I used one Flatout light and cut it in half width-wise. Place 1 cup of mixture on it and add whatever condiments you like. I used salsa, only about 7 calories a tablespoon.

I would double the recipe for a family of four. I made this last night and it was so good I ate two huge fajitas!

    Very easy and wife loved it. i didnt use the bell peppers as i dont like them (the wife does...heh heh)and i did double the recipe. i also added some Hot Sesame oil for a kick. i rolled it all up in a italian herb flat bread. it was spicy and delicious! - 3/16/11
