Pilau Rice

1 T oil2 crushed cardamon pods3/4 t cumin1/2 t coriander1 small chopped onion275ml basmati rice570ml stock 1inch cinnamon stick1 bay leaf1 t salt
Serves 4-6
Add spices (crushed pods as well as seeds) to a warmed frying pan and turn the heat up high to dry roast them. This will take about 1 minute.
Add oil and onion and fry for about 3 minutes.
Add rice and turn the grains until nicely coated and glistening.
Add stock, cinnamon , bay leaf and salt and stir just once.
Put on lid (if you don't have a lid for your frying pan, I find tin foil works fine) and turn heat to lowest. Allow 15 minutes for white rice and 40 minutes for brown. Do not stir or lift lid during cooking time.
When rice is cooked, remove lid, turn off heat and place a clean tea cloth over the pan for 5-10 minutes. This will absorb steam and help keep the grains dry and seperate.
Fluff up before serving.
