Ingredients
1 cup cornmeal, yellow or white1 cup all-purpose flour1/4 cup sugar, scant3 teaspoons baking powder1/2 teaspoon salt1 large egg, beaten1/4 cup canola oil1 cup skim milk
Directions
Heat oven to 450º
Spray with oil baking pan 8 x 8 x 2 inch for thick
cornbread or 12 x 9 x 2 inch for thin cornbread
Combine cornmeal, flour, sugar, baking powder
and salt; mix well
Combine egg, oil, and milk
Add egg mixture to cornmeal mixture and stir with
spoon until just mixed
DO NOT OVER BEAT
DO NOT USE ELECTRICE MIXER
Bake for 20 minutes if thick, 15 minutes for thin or
until brown
