Tosca Reno's Brazillian style Pumpkin

Ingredients
2 Tbs EVOO1 bunch scallions, chopped2 cloves garlic, chopped3 cups pumpkin or squash cubes1/2 tsp sea salt1/2 cup natural apple juice 1 pinch cinnamon
Directions
* In dutch oven (or large lidded pot) heat olive oil over medium heat, add scallions and cook briefly.
* Add garlic, pumpkin, salt, apple juice and cinnamon.
* Cover and cook on low heat for 15 minutes or until pumpkin is soft. You may have to add more apple juice or water to keep pumpkin from sticking.
* Serve hot as side dish.
