Fresh Thai Style Spring Rolls

Ingredients
2 oz. Rice sticks (rice noodles) , cooked according to pkg directions.1/4 c. julienned carrots1/2 c. finely sliced red bell pepper1 c. shredded cabbage (red or green, but red has more nutrition)1/4 c. bean sproutsfresh herbs, parlsey, basil, mint or cilantro, about 1/4 c. or to taste2 T each soy sauce1 T lime juice1 t grated fresh ginger2 T Patially defatted peanut flour (from Trader Joe's)8 spring roll wrappers
Directions
Mix everything except wrappers, lime juice, soy sauce and peanut flour, in a large bowl. Mix the lime juice, soy sauce and peanut flour in a smal bowl for a sauce. Add half the sauce to the vegetable mixture. Soak each wrapper in hot water until pliable. Put 1/8 of the mixture on each wrapper and roll up, burrito-style. Serve with the rest of the sauce.
