Easy Fried Rice

2 Sprays of cooking spray2 large eggs, lightly beaten1 cup carrots, shredded1 cup scallions, sliced3 cups cooked white rice1/2 cup frozen green peas, thawed1/4 cup low-sodium soy sauce
Coat a large nonstick skillet with cooking spray, warm pan over medium-high heat. Add beaten eggs, tilt pan so egg covers bottom. When egg start to set, break them into pieces with a spatula. Cook until eggs are cooked through, about 1 minute; remove eggs from skillet and set aside.
Off heat, recoat same skillet with cooking spray; set over medium-high heat. Add carrots and scallions; saute until carrots are crisp-tender, about 2-3 minutes.
Stir in cooked rice, peas, and soy sauce; cook until heated through, stirring one or twice, about 1 minute. Gently stir in cooked egg and heat through. Yields 3/4 cups per serving.
