17 Day Diet Chicken Vegetable Soup

Ingredients
Chicken breast diced - 12 oz1.5 cup chopped cabbage1 large carrot sliced bite size1 onion diced or chopped2 celery stocks diced1 can crushed tomatoes, large1 can chicken broth (10.75oz).5 teaspoon salt, (I use sea salt)1/4 teapoon black pepper
Directions
Bake chicken till done and cut into chunks. Place all ingredients except the chicken in large pan and summer for one hour or until veggies are soft. Add chicken and heat thoroughly. Makes 4 servings

    I make this but leave out the salt because I add a can of rotel for more of a kick and sometimes add zucchini and squash. I have lost 30 lbs on this diet. - 6/21/11

    I have the book and it does include okra in the recipe. This is a very tasty soup! Love it! I add a tad of Old bay seasoning in place of the salt - 8/27/11

    I love this soup. My mother did the 17 day diet and that is why I tried it. I just made it myself and forgot how good it is unil I had it again. I made sure to season the chicken well before baking as to add more flavor. I used plenty of garlic pepper this time and it was great. - 8/13/11

    I add Old Bay seasoning to this too (I'm from Baltimore, it's almost a law), plenty of pepper makes it taste like old fashioned tomato soup. I never thought I would like this, but I love it. Oh, one more tip... I saute' the veggies for a few minutes before I start to put everything together. - 2/24/13

    I make this by cooking the chicken into stock first, then add more canned broth, and usually 1 or 2 bags of soup veggie mix to it as well as the other ingredients. not to mention lots of garlic. however not for the 17 day diet just to have a good hardy soup. - 1/26/13

    I used a 28 oz. can of crushed tomatoes, a 30 oz. container of low sodium broth and only 2 chicken breasts diced - everything else same as the recipe. Delicious! - 1/31/12

    I added one leek finely chopped, Old Bay Seasoning and some extra cinnamon and salt too. I would recommend letting it simmer for more than an hour to let the spices and veggie flavors meld a bit better. Very tasty experiment! - 12/17/11
