Banana & Chocolate Mini Muffins

1.5 cups AP Flour1 tsp Baking Powder1 tsp Baking Soda1/2 tsp Salt3 ea Bananas, mashed.5 cup Splenda1 ea Egg1/3 cup Unsalted Butter2 squares Baking chocolate, unsweetened, chopped finely
1.Preheat oven to 350 degrees F.
2. Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
3.Combine bananas, splenda, egg, and melted butter in a large bowl. Fold in flour mixture and chocolate- mix until just combined. Scoop into muffin pans.
4.Bake in preheated oven. Bake 10 to 15 minutes. Muffins should spring back when lightly tapped.
Makes 48 mini muffins- 2 muffins per serving
