Low-fat Banana Crumb Muffins

Ingredients
3 overripe bananas1.5 cups white sugar1 egg1/3 cup applesauce1/2 tsp vanilla1.5 cup flour1 tsp baking soda1 tsp baking powder1/2 tsp salt1/3 cup brown sugar1/8 cup flour1/4 tsp cinnamon1 tbsp butter
Directions
Blend wet ingredients and sugar. Mix well.

In a seperate bowl, combine flour, baking powder and soda, salt and cinnamon. Add to wet ingredients and mix well. Batter will be lumpy. Scoop into 18 muffin cups.

Combine brown sugar, flour and cinnamon. Cut in butter til mixture is crumbly but well combined. Top muffins with crumb mixture.

Bake for 18-20 min at 375. Let sit for 5 min, then remove from pan and let cool on wire racks. Wrap in tinfoil to help keep moist.
