Chicken & Prawn Creole

675g Chicken breast no skin1tbsp veg oil2 onions, roughly chopped3 garlic cloves, chopped1 red pepper, 1 green pepper, roughly chopped1 can, 800g, chopped tomatoes1 litre chicken stock1 tsp thyme1 tsp oregano1/4 tsp cayenne450g medium prawns450g long grain rice20g chopped fresh parsley
Heat oil in large non-stick pan. Add chicken and brown for 3 minutes. Add onions, garlic, fry for 3 minutes.
Stir in peppers, tomatoes. Add stock and herbs/spices.
Stir in rice, cover and reduce heat. Simmer for 25 minutes, until most of liquid absorbed.
Add cooked prawns for an additional 5 minutes.
Stir in parsley and serve.
