Brunch Scrambled Eggs

Ingredients
1 cup Egg Beaters, original4 Medium Eggs1/2 cup Green Peppers chopped1/2 cup Onions, chopped1/2 cup Colby Cheese, shredded1 teas Extra Virgin Olive Oil (1 tbsp=3tsp)
Directions
Makes 6 serving wedges

Saute peppers and onions in Olive oil until transparent. Beat eggs and egg beaters together with a whisk. Add to peppers and onions. Scramble to desired taste
.
When ready use a spatula and and mash so that the eggs take the form of the pan. Add cheese to the top and allow to melt. Let stand about a minute and cut into 6 wedges.

Eggs keep their form and can easily be served.
