Black bean Vegi Lasagna

Ingredients
Layer 3 slices uncooked lasagna. In a saucepan mix chopped onion , peppers, well rinsed black beans , garlic and pasta sauce. Layer ricotta cheese mixed with spinach thoroughly drained. Cover with sliced mushrooms. Layer with 3 more slices lasagna noodles, black bean mixture and ricotta cheese mixture. Cover with sliced mushrooms. Layer again lasagna noodles, black bean mixture and ricotta cheese mixture. Pour over 1/4 cup water or more if needed. Salt and pepper to taste. Sprinkle with mozarella. Bake at 350 for 1 hour. Enjoy!
Directions
Bake at 375 for 1 hour. Can be covered with foil for 45 minutes. Remove foil and sprinkle with mozzarella for 15 minutes or until bubbly and cheese is melted. Makes 12 1 cup servings.
