Fluffy Fruit Pancakes

* 1.5 Cups Organic All Purpose Flour * 3.5 Tsp Baking Powder * 1 Tsp Salt * 1 Tbsp Sugar * 1.25 Almond Milk * 1 Fresh Banana, mashed * 1/3 Cup Apple Sauce (no sugar added) * 3/4 Cup Fresh Blueberries (optional)
Mix all the dry ingredients together then add in the Almond Milk and mix well. Then fold in the mashed Banana* and Apple Sauce. At this point you can add in the other flavors you want. I used Blueberries. **You can also add nuts or spices. My boyfriend likes his with cinnamon so I added a tsp to his batch.
Heat a pan over medium heat. If you have pans like mine you may want to add some oil. I used a no cal spray but coconut would also be good. Once your pan is hot, scoop about 1/4-1/3 cup of the mix into the pan. When the sides are dry and there are bubbles in the middle, flip them over. It should only be about 10-15 seconds on this side. If you aren't sure, tap the top of the pancake. If it moves separately from the bottom give it more time and you may want to turn your heat up a bit. Remove the pancake and enjoy!
This recipe should make about 8-10 Pancakes. Nutritional Index is for 9.
- I like to top with peanut butter, while my boyfriend goes with the traditional syrup.
= Easy to pack for a quick snack later!
* I used a softer ripe banana because I don't have a blender. (It's seems to be sweeter as well.)
** Feel free to adjust the ratios and flavors to your liking. I started this recipe looking at LADYPANEK's Super Pancakes 2 Recipe and swapped the eggs and milk out.
