bran flax muffins

Ingredients
1 1/2 cups unbleached white flour3/4 c flaxseed meal3/4 oat bran1 c brown sugar splenda2 t baking soda1 t baking powder1/2 salt2 t cinnamon1 1/2 c grated carrots2 apples chopped1/2 cup raisins1 cup chopped pecans3/4 cup milk2 eggs beaten1 t vanilla
Directions
mix first 8 ingredients, in a med. bowl add apples carrots nuts and raisin's. combine milk,eggs, vanilla. pour liquid ingredients into dry ingredients, stir until ingredients are moistened. DO NOT OVER MIX, fill muffin cups 3/4 full, bake at 350 degrees for 20 minutes. yields 15 medium muffins. ENJOY!
