Cuke Tomato Salad

Ingredients
2 Large cucumbers, peeled and chopped6 Roma tomatoes, seeded and chopped1 Tablespoon Lime Juice1 Tablespoon extra virgin olive oil1 Medium slice of onion1/2 teaspoon salt1/2 teaspoon pepper
Directions
Peel and chop cucumbers and place in a bowl. Halve the tomatoes and use a spoon to remove the inner seeds/ flesh. Chop the tomatoes and add to the bowl. Add one slice of onion, lime juice, olive oil, salt and pepper and toss ingredients together. Cover dish and let the veggies marinate in the fridge for at least an hour before serving. Enjoy!
